Vegan Cookery Classes Saturday 10:00am to 14:00pm
Classes focusing on easy ways to "veganise" your favourite meals. Learn a variety of techniques, recipes, and alternative ways of creating delicious and easy plant-based dishes. Engage in a mixture of hands-on cooking, in addition to live demonstrations by Chef Cat, involving crucial technical skills and fundamental nutritional education.
During the class we will delve into the world of veganism, enabling students to not only recreate healthy and delicious plant-based meals at home using the skills and techniques learnt in class, but also to establish a nutritional understanding of the benefits of eating plant-based and sourcing vegan alternatives to animal products, enabling students to engage with veganism in the most enriching way.
We will cook four dishes during the class: three savoury meals and one dessert, including vital tips and time-saving tricks, and "cheffy" techniques that will improve your efficiency and competency in any kitchen. Anything made in class can be eaten or taken home, alongside take-home recipes for each dish we make.

Sat 25th Jan: Easy Vegan Meals
We will cook dishes such as:
- Homemade Veggie sausages with roasted vegetables
- Harissa polenta, sautéd veg and pulled mushrooms
- Three types of tartine with beetroot hummus
- Ultimate chewy choc chip cookies
Sat 22nd Feb: Specialist Class
“Learn the art of vegan cheeze-making with Chef Cat, and equip yourself with practical skills and techniques to make plant-based cheezes at home.”
In this specialist class we will be learning how to create vegan alternatives to cheese and other accompaniments, and the specific techniques involved in producing vegan cheeze. The class itself provides students with an intimate and practical knowledge of the processes involved in plant-based cheeze-making, enabling learners with the capability of making a variety of different textured and flavoured non-dairy cheezes. The class will be a mixture of demonstration, hands on cooking, with lots of tips, talking and tasting.
You will learn specific techniques to make vegan cheezes and accompaniments such as:
- Nut milks (base for cheezes)
- Garlic and herb cheeze
- Sun-dried tomato crackers
- Tangy cheddar style cheeze

- Crab cakes (Thai)

Sat 18th April: Specialist Class
“Learn the art of fermentation with Chef Cat, and equip yourself with practical skills and techniques to practice fermentation at home.”
In this specialist class, we will focus on fermentation, an ancient method of preserving and enriching foods. Students will discover a variety of fermented foods, their uses, and their health benefits, alongside the specifics and techniques necessary in the process of fermentation, how to ferment at home, and the best equipment to use. The class will be a mixture of demonstration, hands on cooking, with lots of tips, talking and tasting.
You will learn techniques to make and use ferments such as:
- Water Kefir
- Cooking with miso
- Marinating tempeh
Sat 16th May: Vegan Breakfast Classics
We will cook dishes such as:
- Super speedy breakfast smoothies
- English muffins, with smoked carrot and hollandaise sauce
- Tofu scramble on toast, with roasted tomatoes
- Buckwheat pancakes with homemade compote
Sat 13th June: Specialist Class
“Learn the art of vegan baking with Chef Cat, and equip yourself with practical skills and techniques to make plant-based delicacies at home.”
This specialist class will focus on the staples necessary to vegan baking, such as making your own flour packed full of nutrients, in addition to vegan alternatives to ingredients such as eggs and dairy products. The class will provide students with an intimate knowledge of vegan baking, including all the skills and techniques necessary to become a star baker up there with the best of them! The class itself will be a mixture of demonstration, hands on cooking, with lots of tips, talking and tasting.
We will be making:
- Double chocolate brownie
- Chocolate chip cookies
- Lime and coconut loaf cake
- Scones with jam and cream
Sat 19th Sep: Specialist Class

This specialist class is focused on providing students with the knowledge and techniques essential for the pantry staples of a vegan diet. We will learn about fundamental staples and how to make them at home, alongside techniques focused on turning these staples into delicious homemade vegan meals. The class itself will be a mixture of demonstration, hands on cooking, with lots of tips, talking and tasting.
We will be making:

- Egg replacements
- Nut yeast
- Umami flavours
